No Excuse Express Meal



Missed your Shop n' chop this week or forgot your meals? 

This week, I have a great No Excuse, Express Meal video, I made when I was travelling and unable to food prep.

You can easily substitute the ingredients with any other pre-cut vegetables of your choice. Add roast beef, lamb, a tin of tuna or salmon for protein, even add some legumes to boost the nutrition profile of the dish.

No mess, No fuss, No excuse not to miss a nutritious meal!

1 x (215g) salad kit – beetroot , cabbage & puffed quinoa
1 x (200g) shredded raw beetroot
1 x (200g) shredded carrot
150g fresh green beans, ends removed
1 x punnet fresh blueberries, washed
500g fresh pulled bbq/roast chicken pieces
fresh coriander and/or mint sprigs, garnish
200g mushroom slices (optional)
2 fresh lemon wedges
flaxseed oil when serving

*Note - To consume as an Outside the Window meal, simply omit the puffed quinoa.

1. Place salad mix into a large bowl.

2. Next add carrot, then beetroot, toss well to combine.

3. Using kitchen scissors chop green beans over the salad. Sprinkle with puffed quinoa, add blueberries and finish off with chicken.

4. Garnish with coriander and/or mint, squeeze lemon wedges over the top and drizzle with flaxseed oil to complete this quick, MP compliant express meal. There really is no excuse to ever miss a meal. Time to eat! Enjoy!
